Mango Lassi Tarts with Almond Crust
These Mango Lassi Tarts with Almond Crust are a delightful fusion of flavors, combining the tropical sweetness of mango with the tanginess of Greek yogurt, all nestled in a nutty almond crust. The addition of thyme adds a refreshing herbal note, making these tarts a perfect treat for any occasion.
Ingredients:
- 1 cup almond flour
- 1/4 cup coconut oil, melted
- 2 tablespoons honey or maple syrup
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 cup Greek yogurt
- 1 ripe mango, peeled and diced
- 2 tablespoons honey or maple syrup
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 1 tablespoon chopped fresh thyme leaves, for garnish
Instructions:
Preheat oven to 350F 175C
In a bowl, mix almond flour, melted coconut oil, honey or maple syrup, ground cardamom, vanilla extract, and salt until well combined
Press the mixture into tart molds, covering the bottom and sides evenly
Bake the crusts for 10-12 minutes or until lightly golden
Remove from oven and let cool completely
In another bowl, mix Greek yogurt, diced mango, honey or maple syrup, lime juice, and lime zest until well combined
Fill each tart crust with the mango yogurt mixture
Chill the tarts in the refrigerator for at least 1 hour to set
Before serving, garnish with chopped fresh thyme leaves
