Cashew, Carrot, Pomegranate and Halloumi Salad
An interesting mix of cashews, sweet pomegranate seeds, crunchy carrots, and salty halloumi cheese makes this salad bright and refreshing. With its sour and salty taste, the balsamic dressing brings this healthy salad together.
Ingredients:
- 1 cup cashews
- 2 large carrots, grated
- 1 cup pomegranate seeds
- 200g halloumi cheese, sliced
- 4 cups mixed greens e

- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper, to taste
Instructions:
In a dry pan, toast the cashews over medium heat until they turn golden brown
Set aside to cool
In a large salad bowl, combine the mixed greens, grated carrots, and pomegranate seeds
Heat a non-stick pan over medium-high heat
Add the halloumi slices and cook for 2-3 minutes on each side until they are golden and slightly crispy
Remove from heat and cut into bite-sized pieces
Add the halloumi and toasted cashews to the salad bowl
In a small bowl, whisk together the olive oil and balsamic vinegar
Season with salt and pepper to taste
Drizzle the dressing over the salad and toss gently to combine all the ingredients
Serve immediately, garnished with additional pomegranate seeds if desired
