Roasted Mushroom, Onion, and Gouda Grilled Cheese



Enjoy the taste of roasted mushrooms, caramelized onions, and gooey gouda cheese between two perfectly grilled slices of bread.

Ingredients:

  • 2 cups sliced mushrooms
  • 1 onion, thinly sliced
  • 4 slices of gouda cheese
  • 4 slices of bread
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions:

Preheat oven to 400F 200C

Spread sliced mushrooms and onions on a baking sheet

Drizzle with olive oil, sprinkle with salt and pepper, and roast for 15-20 minutes or until tender and golden brown

Heat a skillet over medium heat

Butter one side of each bread slice

Place 2 slices of bread, buttered side down, in the skillet

Top each slice with a slice of gouda cheese, roasted mushrooms, and onions

Place the remaining bread slices on top, buttered side up

Cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side

Remove from the skillet, slice in half, and serve hot
