Weight Watchers Slow Cooker Lo Mein
With this Weight Watchers Slow Cooker Lo Mein recipe, you can enjoy a healthier version of a tasty takeout dish. With lots of vegetables and whole wheat spaghetti, it's a meal that fills you up without making you feel bad.
Ingredients:
- 8 oz
- whole wheat spaghetti
- 2 cups sliced mushrooms
- 1 cup shredded carrots
- 1 cup snow peas
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1/2 cup reduced-sodium soy sauce
- 1/4 cup hoisin sauce
- 3 cloves garlic, minced
- 1 tbsp grated ginger
- 1 tsp sesame oil
- 4 cups low-sodium vegetable broth
- 2 tbsp cornstarch
- 4 green onions, chopped
- 1 tbsp sesame seeds
Instructions:
In a slow cooker, combine mushrooms, carrots, snow peas, red and yellow bell peppers, soy sauce, hoisin sauce, garlic, ginger, sesame oil, and vegetable broth
Cover and cook on low for 4-5 hours
In the last 30 minutes of cooking, whisk cornstarch with 2 tablespoons of water and add to the slow cooker, stirring well
Cook spaghetti according to package instructions and drain
Add cooked spaghetti to the slow cooker and stir to combine
Serve topped with chopped green onions and sesame seeds
