Potato Arugula Lentil Salad with Rosemary
This salad is both refreshing and filling. It has hearty potatoes, peppery arugula, and tender lentils that have been tossed in a tasty dressing made with rosemary.
Ingredients:
- 2 cups cooked lentils
- 4 medium potatoes, boiled and cubed
- 2 cups fresh arugula
- 2 tablespoons chopped fresh rosemary
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions:
In a large bowl, combine the cooked lentils, cubed potatoes, arugula, and chopped rosemary
In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to make the dressing
Pour the dressing over the salad and toss gently to combine
