Salted Rolo Stuffed Chocolate Cookies Recipe



Indulge in these delectable Salted Rolo Stuffed Chocolate Cookies! These chocolatey treats have a gooey surprise inside - a melted Rolo candy. The touch of flaky sea salt elevates the flavors to create a perfectly balanced sweet and salty delight.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 24 Rolo candies, unwrapped
  • Flaky sea salt, for sprinkling

Instructions:

Preheat the oven to 350F 175C and line baking sheets with parchment paper

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy

Add the eggs one at a time, beating well after each addition

Stir in the vanilla extract

In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt

Gradually add the dry ingredients to the wet ingredients, mixing until just combined

Scoop about 2 tablespoons of cookie dough and flatten it in your palm

Place a Rolo candy in the center and wrap the dough around it, rolling into a ball

Place the stuffed cookie dough balls on the prepared baking sheets, leaving some space between them

Bake in the preheated oven for 10-12 minutes

The cookies will appear slightly underdone, but they will continue to firm up as they cool

Remove from the oven and immediately sprinkle a pinch of flaky sea salt on top of each cookie

Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely
